The Mighty Brussels

Brussels Sprouts are Awesome!!

  They're one of those good for the body foods that really packs a punch. Try this on for size; high in fiber, a great source of protein, low in fat and calories, loaded with vitamin A, vitamin C, potassium, calcium and folacin, plus they belong to the cabbage family, which is known to contain cancer fighting agents. So I ask you, what's not to love?  Yet, some people do still have brussels sprouts hang-ups. Hopefully this recipe will dispel any reservations. It's quick, simple, loaded with flavor and sure to disappear off the plates. I'll even go as far to predict that once you try it, you'll want to make it as often as possible while these cute mini-cabbages are in season! 
 
The Ingredients : 
1 1/2 pounds Brussels Sprouts, washed and sliced in half
1 head (yes, the whole head) Garlic, chopped fine
3/4 lb of your favorite Organic Linguini
Salt
Olive Oil
Red Pepper Flakes
Parmesan or Asiago Cheese 


Get your pasta water on to boil. While that's happening, wash and slice the sprouts.
Lightly salt the bottom of a large pan.  Over medium heat add the sprouts, carefully placing them face down. Nothing but sprouts and salt for now... when you see them turn color slightly - they'll get brighter, then add the olive oil - enough to coat the bottom of the pan and make them sizzle. Lower the heat slightly and cover. Cook undisturbed for at least 5 minutes. Meanwhile, start cooking your pasta.
After 5 or so minutes, check the underside of the sprouts. They should be caramelizing.  Add the garlic and sprinkle with more salt to taste. Continue to cook, uncovered, until they are dark and caramelly but still somewhat firm. This will bring a sweet and nutty flavor to the dish. De-glaze with  a ladle or two of pasta water. Add your cooked pasta, 1/4c more olive oil, and additional pasta water as needed. Season with red pepper flakes. Serve with fresh grated Parmesan.                                                                       
Makes about 6 servings ENJOY!
